I love Racael Ray! I love her personality, her shows, her cookbooks, and have yet to try a recipe of hers that was not exactly as easy as it appeared and just as tasty!
So, yesterday I was given some gorgeous home grown eggplant (the things look fake they are so pretty!) and I was trying to decide what to make with it.
Wouldn't you know she made a stew that has eggplant, and looked so delicious.
For dinner tonight I am having;
Vegetable Stew (Giambotta)
Recipe courtesy Rachael Ray
1/4 cup extra-virgin olive oil plus some to drizzle
1 bay leaf, fresh or dried
3 cloves garlic, 2 chopped, 1 whole cracked from skin
2 onions, sliced
2 large potatoes, peeled and chopped
1 eggplant, chopped
1 zucchini, chopped
1 red bell pepper, seeded and chopped
Salt and pepper
1 (28-ounce) can fire roasted diced tomatoes
1 cup stock, chicken or vegetable
1/2 cup torn or chopped basil (10 to 12 leaves)
4 (1-inch thick) slices whole-grain crusty bread
1/2 cup grated pecorino
Preheat broiler.
Heat a medium soup pot over medium heat. Add extra-virgin olive oil, bay, chopped garlic and onions and let them sweat out while you prepare the rest of the veggies. Work next to the stove and drop as you chop, in order of longest cooking time: potatoes, eggplant, zucchini, and bell pepper. Season with salt and pepper, cover and cook 10 minutes, stirring occasionally. Uncover and add tomatoes and stock and cook 5 minutes more, to heat through. Turn heat off and stir in basil.
Char bread under broiler and rub with cracked garlic then drizzle with extra-virgin olive oil, top with cheese and pepper and return to the broiler for 30 seconds to brown cheese. Serve cheese whole-grain toast with bowls of vegetable stew.

I am having pork, vegetables, and asparagus. The recipe is very easy:
-Have your husband grill pork and vegetables on the weekend
-Steam asparagus on the stove for 4 minutes
-Enjoy

Tonight we are having the ULTIMATE kid favorite.
My Gram calls it Chicken Oscabali
The kids call it chicken,Rice and Gravy.
It is baked chicken. I use boneless/skinless breast. S&P dab of butter. Baked 350 for 40 mins.
Then pour LARGE can of Cream of chicken soup mixed with a can of milk (i use half can of 1/2&1/2 and half milk. Since I use 1%)
Bake it for 20 mins more.
Serve over rice.
I love it with Italian green beans.
BUT the kids love it with CORN.
This is not Joseph fav. He adds red pepper flakes to his bowl. OH.. Did I mention you have to use a bowl. .The gravy runs..mmmm

Are you making the dessert she made along with the giambotta? That looked yummy, too. I have had Laura's eggplant lasagna and it is so much better than traditional lasagna!
Tonight we were boring--I just did a fruit salad and wrapped some hot dogs in crescent roll dough and baked them...I'm still recovering from my Pappasito's night last night! ;)
Cara, no I did not make the dessert she made, although I totally agree it looked awesome! I made an angel food cake from scratch last week for my mother's birthday (much easier to buy the suckers...) so I was angel food caked out. I will try it sometime though.
GLAD last night was wonderful... :)
