Well, whatever the case I tried a new recipe today, and simply have to share with you its greatest.
It has five meager ingredients.
F.I.V.E.
That is reason enough to get excited people.
It has more sugar than it does flour. This reason alone means it should be FABULOUS.
It also has more butter than it does flour, but less butter than sugar, so bottom line lots of butter and sugar. Double Yum.
Oh yes, and more pecans than flour too!
Wouldn't it be funny if I told you flour wasn't one of the five ingredients after all this rambling on and on about how much more sugar, butter, and pecans are in this recipe?
Hilarious.
But alas, it does have flour. Half a cup to be exact.
And two beaten eggs.
So give me some brown sugar, butter, pecans, flour, and eggs.
What's that spell? ( I couldn't resist...)
What's that smell? (Don't blame me, you could have stopped reading a long time ago!)

There are several versions online, but the one I used was:
1 cup packed light brown sugar
1/2 cup flour
2/3 cup melted butter
1 cup chopped pecans
2 beaten eggs
Mix dry ingredients, then add butter and eggs until just moistened.
(And here is the tricky part, all the reviews online said that these were really prone to sticking in the pan. So several people recommended using Baker's Joy. I could not find it in my grocery store, but I did use Pam for baking and had no problems.)
Fill mini muffin tins, bake at 350 for 15 minutes.
I doubled the recipe and was able to get 70 mini muffins.
They really are wonderful!

I would so run a dozen or two over to you....if you lived any closer! ;) They were a big hit at my meeting this morning, so I anticipate them becoming a go to recipe. I bought a big bag of pecans and put it in my freezer, because I figure the other four ingredients I will almost always have on hand.
Oh, and you definitely need a 24 mini muffin pan to make these in.... do you have one?

Is it non-stick? How many little mini muffins does it make at a time? And how much????
